will HSDPA / GSM 900 / GSM 1800 / GSM 1900 work in san antonio
I want to buy the LG Viewty but it requires these networks HSDPA / GSM 900 / GSM 1800 / GSM 1900. I have ATT and it requires 850/1900. Will it still work without the 850?

No; US frequencies are 850/1900; the phone you want, as you correctly note, does not operate on the same frequencies. Cell phones are NOT magic, and you cannot make a phone work on those frequencies simply by wishing at it; the radio(s) for those frequencies have to be present in the phone.
